I Canned!!!!!

At the beginning of every summer I always say I'm going to learn how to can so that not a thing from our garden goes to waste. Normally we eat most of our vegetables after harvesting them, or we give them away. Some of our vegetables we blanch and freeze. We seem to always have some that end up spoiling or go to seed before we can use them, though. I was determined this year to actually CAN some of our vegetables. One reason being, that I wanted to learn how to can so that I could say I did it. Another reason was to preserve what we didn't end up being able to use so we wouldn't feel guilty. This year we had a decent amount of tomatoes, not a ton, just enough that several would go to waste if we didn't do something with them. So...I canned them!!! I made Italian diced tomatoes and got seven HALF pints out of them. I know, that isn't much, but at least I can say I canned now =). I use Italian diced tomatoes in a lot of my cooking, so I'm excited to truly reap the benefits of preserving!!
